Vegan Maryland No-Crab Soup

I was born and raised in Philadelphia, but I've lived in Maryland for over 20 years. And anyone familiar with this state knows how crazy people here are for anything Maryland, like the state flag (it's literally on everything), and definitely including their crabs. Now that I no longer eat meat, I don't really miss it, except occasionally for seafood- which is one of the harder things to recreate in a vegan version. 

This soup, though, really felt like the original to me. Maybe because most of the Maryland crab soups I've had just seemed like a way to use up leftover crab shreds and are basically a vegetable and Old Bay soup. This tomato-based Maryland-style soup is both comforting and nourishing, without the seafood. It’s one of those recipes that comes together quickly, uses simple ingredients, and still feels like you put in more effort than you actually did.

This soup shows how eating more vegetables doesn’t have to be complicated or expensive. Recipes like this make it easy to naturally increase fiber, antioxidants, and phytochemicals that support everything from heart health to digestion.

What makes this recipe especially fun is how it mimics the classic. Mushrooms bring a savory, umami depth, and if you use shredded king oyster mushrooms, the texture is surprisingly similar to crab (but pretty much any type of mushroom will work here). Hearts of palm are optional, but they add another layer of that familiar “crab-like” bite. And of course, Old Bay ties it all together with that signature Maryland flavor.

This is also a very forgiving recipe. You can swap in whatever vegetables you have on hand- lima beans, green beans, extra corn, or even leafy greens at the end. Prefer a brothier soup? Add a bit more vegetable broth. Want it spicier or more peppery? Adjust the Old Bay to your taste. Best of all, it’s a one-pot meal that’s ready in about 30 minutes. It’s the kind of recipe you can throw together on a busy weeknight, but it also works beautifully for meal prep since the flavors deepen over time.
